Healthy Oat Protein Bars by Alessia Simmen
Ingredients
- 1 cup Simply Natural Organic Rolled Oats
- 2 tbsp cocoa powder
- 3 tbsp Simply Natural Organic coconut nectar sugar
- 2 1/2 tbsp Simply Natural Organic Pea Protein Powder (optional)
- 1/2 tsp baking powder
- 1/8 tsp french sea salt
- 1/4 tsp vanilla extract
- 1/4 cup oat milk (or any milk should work)
- 2 tbsp Simply Natural Virgin Organic Coconut Oil
- 2 tbsp Simply Natural Organic Acacia Honey
- 1/3 cup raspberries (Fresh or frozen)
- 1/4 cup chocolate chips

Methods
- Preheat the oven to 180°C.
- Remove the raspberries from the freezer to defrost.
- Take 3/4 cup of the oats and blend until it becomes a flour. In a small bowl, sift together all the dry ingredients.
- In a pot on low heat, place in all the wet ingredients and whisk for 2 min.
- Add the dry ingredients and leftover 1/4 cup of oats from the beginning to the wet ingredients.
- Fold in the raspberries and chocolate chips until evenly distributed.
- Scoop about 1 tablespoonfuls of batter onto a lined baking sheet
- Keep 1-2 inches apart, as the cookies expand a little
- Bake the cookies in the oven for 13-15 minutes.
- Remove from the oven and let cool for a few minutes
- Enjoy with a glass of milk!
Note: You can honestly put whatever you prefer into these bars, whether it’s more chocolate chips or nuts. If you are allergic to nuts you can swap the nut butters out for a seed butter!
