Apple Pancakes

The Ingredients:

  • 300 g ZENXIN Organic Fuji Apples, peeled, cored and quartered
  • 3 tsp Simply Natural Organic Cane Sugar
  • 1 ½ tsp Simply Natural Organic Cinnamon Powder
  • 250 g water
  • 4  ZENXIN Organic Antibiotic Free Medium Eggs (Selenium Enriched)
  • 300 g Simply Natural Organic All Purpose Flour
  • ½ tsp baking powder
  • 10 – 20 g unsalted butter, for frying
  • Simply Natural Fresh Raw Honey, for serving

Methods

  1. Place apples, sugar and cinnamon in mixing bowl then chop 5 sec/speed 5. Transfer to a bowl and set aside.
  2. Place water and eggs in mixing bowl then mix 15 sec/speed 4.
  3. Add flour and baking powder then mix 15 sec/speed 4.
  4. Add reserved chopped apples and mix 5 sec/speed 3.
  5. Heat a tablespoon of butter in a large pancake or frying pan over a medium heat. Pour in batter to make rounds approx. Ø 10 cm (you may be able to cook two at once). Cook for 2-3 minutes on each side then transfer to a plate. Repeat, adding more butter when necessary until all batter is used. Serve warm, with a drizzle of honey.
