Ingredients

Savor the vibrant flavors of our liver-nourishing Mediterranean Bowl. Bursting with essential nutrients, antioxidants and anti-inflammatory compounds, this bowl supports detoxification, reduces inflammation, and protects liver cells from damage.
For the Bowl

  • 1 cup Organic Baby Spinach
  • 1/4 cup Simply Natural Organic Mixed Quinoa
  • 1/4 cup ZENXIN Organic Cherry Tomatoes, chopped
  • 1/4 cup ZENXIN Organic Cucumber, chopped
  • 1/4 cup Simply Natural Seaweed Bean Curd, diced
  • 1/4 cup cup Organic Red Onion

For the Dressing

  • 2 tablespoons Simply Natural Cold Pressed Organic High Oleic Sunflower & Olive Oil
  • 2 tablespoons Organic Lemon
  • Salt and pepper to taste

Methods

Preparation Method:

  1. Mixed Quinoa: Rinse the quinoa under cold water to remove any debris. In a small saucepan, combine the quinoa with 1/2 cup of water. Bring to a boil, then reduce heat to low, cover and simmer for 15-20 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  2. Dressing: In a small bowl, whisk together the sunflower & olive oil with fresh-squeezed lemon juice. Season with salt and pepper to taste. Set aside.
  3. Assemble the Bowl: In a serving bowl, layer the baby spinach as the base and top it with quinoa, cherry tomatoes, cucumber, seaweed bean curd and red onion. Drizzle the prepared dressing over the entire bowl. Toss gently to combine all the ingredients and ensure they are evenly coated with the dressing.
  4. Serve immediately and enjoy.
